RAW Key Lime Pie


Last night I went to a raw pot luck with a bunch of ladies and my favourite recipe of the night was for sure the Key Lime Pie!!
It is so easy and fast to make, you literally just blend up the ingredients, place in a pie dish them put in the freezer for a while.

Here is Helena's amazing recipe;
Key Lime Pie:
Crust
blend 1 cup walnuts and 4 medjool dates until crumbly
press on bottom of pan

Filling
blend 3 medium-large ripe avocados, 1-3 tablespoons lime juice, 3-5 tablespoons agave nectar all to taste
pour over crust, chill in freezer

Topping
seasonal fruit of your choice!

Chocolate Pie

Dessert
Chocolate Raspberry Tart
serves 6 ~ $1.12 per serving

1 cup walnuts
1 cup raisins
1 ripe avocado
2 ripe bananas
3 tablespoons agave
1/4 cup cocoa powder
1/2 teaspoon vanilla
2 tablespoons coconut oil
raspberries

This is just a basic chocolate avocado/banana tart

-Blend the walnuts, raisins. Press into a tart plate and chill.

-Blend the avocado, bananas, agave, vanilla until very smooth. Pour into tart shell, top with raspberries, and chill until slightly more firm.

Raw Vegan Pesto Pasta


=) Salt, additive,fat & nut free!!

With more sauce & cherry tomatoes added

Ingredients
-4 Medium Zucchinis spiralized in noodles
Sauce;
-1 lb baby spinach
-1 lemon
-Small handful basil
-1 garlic clove (optional)
Blend together
-chopped up cherry tomatoes to add into pasta at the end

So for dinner tonight I tried a new recipe from a blogger that I love!=)

-What I love about eating light n healthy raw food is that is digests so easily and you feel awesome afterwards not all heavy and tired, ready for a nap! Plus raw food still has all the minerals & enzymes intact. (They get destroyed and dehydrated when cooked.)
-The basic deal of raw-food, is that by not heating your eats above 104 F (40 C), the natural enzymes in the food are still functional. This preserves the ‘alive’ state of food. These digestive enzymes are extremely important because they break down the sugars, starches, proteins and fats that accompany them, making digestion of these items much easier on your body!

-Otherwise, your inner systems (namely the pancreas) have to produce these enzymes from scratch. In doing so, a lot more energy is required and the rate of digestion is slowed.
